Shabu-Shabu Recipe

Shabu-Shabu Recipe(しゃぶしゃぶレシピ)
For 2 or 3 people (2~3人分)
●Material(材料)
Slice beef(スライス牛肉) 400g
Chinese cabbage(白菜) 1/4玉
Mizuna(水菜) 1株
Spring onion(長ネギ) 1本
Carrot(人参) 1/2本
Shiitake mushroom(椎茸) 3個
Enoki mushroom(えのき) 1/2袋
Tofu(豆腐) 1/2丁
●Soup<だし汁>
Water(水) 1000cc
Kombu(昆布) 10cm
●Momiji oroshi<紅葉おろし>
Radish(大根) 150g
Chilie pepper(赤唐辛子) 1~2本
●<薬味>
Young green spring onions(小ねぎ) 適量
●Sauce<タレ>
Ponzu Vinegar (ポン酢)(市販品)
Sesami seeds sauce (ゴマダレ)(市販品)+ Garlic (にんにく)

●How to make(作り方)
①Pour some water into a saucepan and add Kombu ( brown seaweed ) .
②Prepare some vegetables as chinese cabbage ,Mizuna ,spring onions ,Shiitake mushrooms ,carrots ,Enoki mushrooms ( Gilled mushrooms ) and Tofu.Cut all these vegetables in the following way : cut each bunch of Mizuna into 3cm. Cut spring onions diagonally into 5-6cm. each. Cut and discard the stems of Shiitake mashrooms. And finally cut carrots ,Enokis ,and Tofu in a way to be easy to eat.
③Prepare some condiments such as ; young green spring onions ,red chilies ,and radish. First ,remove the steam and seeds of chilly peppers. Then soak them in water until they get soft. After that ,peel the radish and open a hole at the middle by a chopstick. Then insert or place the soften chilly peppers into this hole. Then shave it with a grater and put a certain amount in each person's bowl and add diced young spring onions.
④Put the saucepan with water on the stove and light the fire. Add the vegetables and Tofu into the pan when the water is boiling.
⑤When the vegetable are tender ,dip each slices of beef into the boiling water ( soup of vegetable and Tofu ) and then dip it into the shaved radish and diced young spring onions as a sauce and serve it.
①鍋に水と昆布をいれておく。
②野菜を切る。白菜、水菜はザク切りに、長ネギは斜め切りにする。
椎茸は石づきを取る。人参、えのき、豆腐は食べやすい大きさに切る。
③薬味を用意する。小ねぎは小口切りにする。
<紅葉おろし>赤唐辛子は ヘタを取って種を取り除き、水につけて
柔らかくしておく。
大根の皮をむき、箸等で大根に穴をあけ、赤唐辛子を差し込み、
すりおろす。
④鍋を火にかけて煮立ったら、野菜、豆腐を入れる。
⑤野菜に火が通ったら、牛肉はさっと湯にくぐらせて、タレと薬味で食べる。
